这样养生最健康 : Miso味噌防癌 2005/12/29 味噌(Miso)是日文,味噌是日本的传统自然发酵食物。虽然发酵方法源自中国,但日本人已将它细加研究,然后配合自己的文化而自成一格,把味噌发扬光大,推展至世界各个角落。当然日本味噌有很多种,最值得赞赏的日本味噌制造者,已经应用无基因改造有机裁培原料来制作味噌了。 友人问道:你推广生机饮食及长寿饮食法十多年来,有没有感觉一些些的成就?我说:是有一些成就感,你不见稍为有健康意识者,都知道味噌为何物吗? 味噌(Miso)是日文,味噌是日本的传统自然发酵食物。虽然发酵方法源自中国,但日本人已将它细加研究,然后配合自己的文化而自成一格,把味噌发扬光大,推展至世界各个角落。当然日本味噌有很多种,最值得赞赏的日本味噌制造者,已经应用无基因改造有机裁培原料来制作味噌了。 味噌有很多种,红色的如糙米味噌、苡米味噌、大豆八丁味噌、纳豆味噌及白色的大豆味噌等。发酵越久,味噌的颜色就越深,调理身体的功效就越大。所以苡米味噌及八丁味噌的发酵期约3年,糙米味噌的发酵期则2年,大豆白味噌的发酵期最短,只有4至6个月的时间,所以味道有一点甜,但疗效功能不大。选择味噌要找生的,功效才大,即是说在制造过程中不用高温杀菌,所以买回家的味噌还是继续在呼吸的。 味噌在西方很风行,是因为经过长寿饮食法创办人久司先生的一番努力介绍,生味噌里含有很丰富的友善细菌及酵素,帮助增长肠胃里的友善细菌,提升消化能力及吸收养分,根据医学的研究,味噌对减少患癌症、心脏病、辐射病及其他病症的机会。 常吃味噌能防乳癌 在夏威夷的第一代日本移民患乳癌的机会,是后代移民的60百分比。在伯明汉的阿拉巴马大学,科学家证实了味噌、纳豆、天然发酵酱油以及其他传统发酵大豆食物能减低患病的机会。在日本的日本人食用天然发酵食物是比外出的移民多了5倍。 在试验室的试验,吃味噌及天然发酵食物的妇女患癌及肿瘤的机会较少,这显示食用味噌是帮助日本妇女抗癌的主要的原因。 减低三分之二的肿瘤 在日本广岛的科学家报告说,味噌能帮助减低乳癌肿瘤。这一项试验是用老鼠来进行测试,结果味噌及黄豆被证实有助预防乳癌。 消除体内的辐射残留 有一组研究原子弹辐射的科学家发现,味噌能有效的排除人体内的辐射残留及有效的控制器官因辐射的发炎。在一项试验里,一群4个星期大的雄雌老鼠腹部被注射含有辐射物131及134,结果辐射物131累积在老鼠的甲状腺,而辐射物134则泻留在它们的小肠及肌肉。一组被喂用味噌的老鼠体内的辐射物在一星期里只剩下一半,它们的肾脏,肝脏及胰脏里的辐射残留也明显的减少,因辐射而发炎的器官也好转了。 预防脑癌,乳癌及摄护腺癌 常吃味噌能防癌,因为味噌有一种黄酮素能阻碍滋养肿瘤而增生的血管的生长,使肿瘤缺乏养分而枯萎。德国海德堡儿童大学医学院的科学家报告说,味噌阻止癌细胞增长,对脑瘤,乳瘤及摄护腺瘤皆能预防。 建议你选用有机裁培原料制成的生红味噌,如3年发酵八丁味噌、苡米味噌或糙米味噌,疗效很好。值得一提的是日本无双株式会社出品的有机生红味噌,品质是世界闻名的。 八丁味噌汤 以下是一道有机材料烹煮的抗癌八丁味噌汤与你分享: 材料(1人份): ●过滤水3杯 ●昆布3公分 ●带叶白萝卜半条,切片形 ●野松菇4个 ●红萝卜半条,切片形 ●牛蒡3公分,切圆形薄片 ●无双八丁味噌(Muso Hatcho Miso)一茶匙,用少许水调和。 做法: 1 用一个钢锅,把水煮开。 2 加入昆布、萝卜、牛蒡,再煮开,然后以小火煮约25分钟至水成1杯。 3 加入味噌搅拌一下即可。 建议你每日至少喝1碗,在佳节里吃多了油腻食物时,更要喝味噌汤呀。 - 摘自南洋商报 -

Read from tvbs news that, in China, some business men used the concept of "fatt choy" cat to help bringing luck for their shops. Instead of the cartoon type of fatt choy cat, they use real cat and binded the cat outsite the shop. This concept is actually origin from Japan. I felt that this is a crazy idea, and feel sorry for those cats. Nowadays, you find many different type of people in this world. .. Felt that this is really unacceptable ...

Pasar Malam (Night market)
I like to tour around pasar malam. It was one of my must-go place during studying in University. I was at Johor that time, and during Friday, there will be a mid-size pasar malam held in Taman University, which took about 5 mins drive from my house in Pulai to go there. Usually I will go with my housemates or coursemate. We all like to eat and at the same time walked around pasar malam to see things. I like to eat “tau fu fa”, so it has become one of the thing that I will buy whenever I go to pasar malam. The feeling of eating and at the same time walking along the street is great. I was told by my counterpart from U.S that they don’t have that habit, or it is very rare to see people walking along the street and eating at the same time. However, I just enjoy the feeling. ^o^ I love to see the way they sell things, the way people bargain, the different types of things sold, the new things that dun usually see, or the things that not sell in supermarket or shopping complex. Besides, it helps to control my spending. Hehe.. In Johor, the biggest pasar malam is in Tun Amina, followed by Sri Puteri and Tmn University. Maybe there are other places that I haven’t mentioned here. In Penang, the most favourite pasar malam that I like is in sungai dua, which is within the walking distance from my house. This pasar malam is very special, because it is an “I” shape, the front part,which is opposite Macro,along the sungai dua main road, are mostly Chinese businessman, and the back part,which is close to toto shops are comprised of Malay businessman. Here are the special things you can try in pasar malam. 1) lekor – Malay keropok. Here not many Chinese people like to eat, I only came to know this in Johor. My roommate like to eat this a lot. 2) Apom Malik – There are the different type of apom malik, find it out, you will be surprise. (Malay) 3) Mua zi – Chinese one. With sesame spread on top. 4) Etc . Below are the places where you can find pasar malam in Penang. Monday – farlim (not quite sure) Tuesday – batu maung Wednesday – sungai nibong Thursday – opposite BJ Fri – lip sin garden Sat – sungai dua If you are keen to go,drop me an email, I will draw a map for you. Eat Well and be Healthy HEADACHE? EAT FISH! Eat plenty of fish -- fish oil helps prevent headaches. So does ginger, which reduces inflammation and pain. HAY FEVER? EAT YOGURT! Eat lots of yogurt before pollen season. Also-eat honey from your area (local region) daily. TO PREVENT STROKE DRINK TEA! Prevent buildup of fatty deposits on artery walls with regular doses of tea. (actually, tea suppresses my appetite and keeps the pounds from invading....Green tea is great for our immune system)! INSOMNIA (CAN'T SLEEP?) HONEY! Use honey as a tranquilizer and sedative. ASTHMA? EAT ONIONS!!!! Eating onions helps ease constriction of bronchial tubes. (when I was young, my mother would make onion packs to place on our chest, helped the respiratory ailments and actually made us breathe better). ARTHRITIS? EAT FISH, TOO!! Salmon, tuna, mackerel and sardines actually prevent arthritis. (fish has omega oils, good for our immune system) UPSET STOMACH? BANANAS - GINGER!!!!! Bananas will settle an upset stomach. Ginger will cure morning sickness and nausea. BLADDER INFECTION? DRINK CRANBERRY JUICE!!!! High-acid cranberry juice controls harmful bacteria. BONE PROBLEMS? EAT PINEAPPLE!!! Bone fractures and osteoporosis can be prevented by the manganese in pineapple. PREMENSTRUAL SYNDROME? EAT CORNFLAKES!!!! Women can ward off the effects of PMS with cornflakes, which help reduce depression, anxiety and fatigue. MEMORY PROBLEMS? EAT OYSTERS! Oysters help improve your mental functioning by supplying much-needed zinc. COLDS? EAT GARLIC! Clear up that stuffy head with garlic. (remember, garlic lowers cholesterol, too.) COUGHING? Taking 2 - 4 oranges a day may help keep colds away, lower cholesterol, prevent & dissolve kidney stones as well as lessen the risk of colon cancer. Watermelon: Coolest Thirst Quencher. Composed of 92% water, it is also packed with a giant dose of glutathione which helps boost our immune system. They are also a key source of lycopene - the cancer fighting oxidant. Other nutrients found in watermelon are Vitamin C &Potassium. (watermelon also has natural substances [natural SPF sources] that keep our skin healthy, protecting our skin from those darn suv rays) Guava &Papaya: Top awards for Vitamin C. They are the clear winners for their high Vitamin C content. Guava is also rich in fiber which helps prevent constipation. Papaya is rich in carotene, this is good for your eyes. (also good for gas and indigestion) Tomatoes are very good as a preventative measure for men, keeps those prostrate problems from invading their bodies.

Date: 19 Feb 2006 Part 1 :: Story started when I tried Baba and Nyonya Food in a restaurant The story started as I went to try Nyonya Food in Penang with a friend. Part 2 :: Come to know more about Baba and Nyonya During Penang Street show, I visited Cheah Kongsi with Mulan. Inside the temple, they have a small room to display Baba and Nyonya. I got to see some of the custome that Nyonya wear and also some cooking utensils that they used. Part 3 :: My diving Buddy Part 3 is the most interesting part. It turned up that my dive buddy is a baba. I was a bit shock to learn the fact when he told me the truth in bus station on the trip back from Phuket to Penang. His father is a baba, and his mother is a nyonya. They are a mixture of Malay and Chinese. He told me something about their cultures and religions. chillies. It just shuddered me to see him eating so much chilly. Hahaha .. though i like to eat spicy too. Then i told him that i wanted to try authentic Baba and Nyonya food. He said he can cook !! It strucked me 2nd time. So, here ended up we have a cooking day today. I wanted to learn from him how to cook Nyonya food. 1) Cili Garam Pork
Ingredients : buah kepas, lime leaves, red chillies,onions a) Blended 3/4 biji buah kepas + chilli + onions
hehe .. It seems pretty easy to prepare. Dun worry about how much you need to add the salt, just start by trying to put small amount into the dish and then sample. If you dissatisfied with the taste, add more. :)
Ingredients : Lemons ( around 7 small biji), chicken, garlics, unions, chilli a) Add some oil, then pour inside garlic, follow by chilli juice), add salt 3) Sambal Udang Haha .. i didn't jot down the menu. After all, he used some special belacan bought from Melaka in this menu. Last two dishes ( vegetables ) are prepared by me. 4) Mix Vegetables ( my favourite )
